Meatless Monday!

Hey guys,

"Meatless Monday" is coming up, so why don't you try this potato and leek soup I just posted?

If you don't know Meatless Monday, give it a try! It's a healthy way to cut back on meat consumption...if everyone did it, we would save massive amounts of land that we use for cattle to grow more staples and vegetable. do you know cattle also give off methane, one of the major greenhouse gases that contribute to climate change?! Also slaughterhouses are polluting with their run-off (ewww) and the transport and production of meat produces carbon dioxide as well.

Remember also to eat seasonally, to save on transport costs...both in price and for the environment! Right now in the UK, leeks, cabbage and kale are at their peak! Soup is very easy and it's great to make a large portion on a Sunday night for the rest of week as an easy lunch, dinner, etc. Just an idea!
